Shrimp Spaghetti




Remember my last post where I had mentioned about A’s constant craving for Pizza Hut’s Aglio Olio on Saturday? Well, It did not happen on Saturday and on Sunday we had guests over hence it did not happen on Sunday either, though he did not complain, I just had to make him some nice Spaghetti before the Weekend got over.




On our way back from some more ‘Edible hunt’ from Dorabjee’s (A Super Market here) , we stopped at Sagar’s and picked up some deveined Shrimps with their tails on. I did not think I will make Shrimp Spaghetti though. After getting back home and cruising through some Spaghetti making videos, I decided to make this ‘Shrimp Spaghetti’ which came out really well.




Here is what you will need to make Shrimp Spaghetti:
(This will make two servings)

Spaghetti : 250 gms, boiled as per instructions on the packet. I boiled mine in boiling water for 10 minutes exact and to the boiling water I had added a cube of Chicken Stock

Chicken Stock : 1 Cube

Shrimps : 200 gms, cleaned and deveined

Garlic Cloves – 5, coarsely chopped

Onion – 1 medium – coarsely chopped

Green Chillies – 2, finely chopped – normally Red Chilli is used for here, I did not have Red Chillies, it did not make a difference to the taste though

Tomato – 1 medium - puréed

Extra Virgin Olive Oil – 1.5 tsp

Italian Seasoning* – 1.5 tsp

Oregano – 1 tsp - I like more of Oregano, hence besides Italian Seasoning, I added this too, if you do not like it, skip

Salt to taste

Pepper – ½ tsp

Go low on the herbs and Pepper if you do not want it too Spicy, we like it super spicy hence mentioned the quantities I added




How to make Shrimp Spaghetti:

Heat 1.5 tsp of EVOO in a Pan, add Garlic and Green Chillies and let them sizzle for 30 seconds

Add the chopped Onions and fry till tender

Raise the heat to high, add the Shrimps and stir fry for 2 minutes

Add the Tomato Purée, keep stirring  

Sprinkle the Italian Seasoning, Oregano, Salt and Pepper in and mix

Add the already cooked Spaghetti and toss on high heat for two minutes, make sure all ingredients are well incorporated

Do a taste test and turn off the Stove if it suits your taste bud, add more Salt if needed



Serve immediately – this makes a lovely Romantic Dinner for two on the Couch :D

Italian Seasoning* - can be made at home adding the following ingredients together : 
2 Tablespoons Basil
2 Tablespoons Marjoram
2 Tablespoons Oregano
2 Tablespoons Rosemary
2 Tablespoons Thyme

Store in an air-tight container.
